Maple Syrup Blondies

Maple syrup replaces refined sugar in this take on blondies. The maple flavor shines through, putting a fall spin on this classic delectable treat.

Ingredients

  • 1 1/2 cup plus 2 teaspoons maple syrup

  • 2/3 cup unsalted butter

  • 2 eggs (room temperature)

  • 1/2 teaspoon vanilla extract

  • 2 1/4 cups whole wheat flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 325°F.

  2. Heat maple syrup in saucepan over medium high heat until it comes to a simmer. Lower heat to medium and let syrup reduce by approximately 1/4 cup, about 5 minutes. Turn off heat and add butter. Set aside.

  3. In a large mixing bowl, whisk together eggs and vanilla. Slowly stream syrup and butter mixture into eggs, while whisking continuously.

  4. In a separate bowl, combine all dry ingredients and mix well. Incorporate dry mixture into the wet mixture in small amounts, stirring to a smooth consistency.

  5. Pour into a well-greased 9x 9” glass baking pan. Bake for 25-30 minutes or until center is moist and set. Remove from oven and cool before cutting.

Maple and Dried Fruit Stuffed Baked Apples

When you’re craving apple pie but can’t be bothered to make a crust, try these stuffed baked apples!

Ingredients

  • 1/4 cup light brown sugar, packed

  • 1/4 cup dried cherries, chopped

  • 4 medium dried figs, chopped

  • 2 tablespoons sliced, almonds

  • 2 tablespoons pecan pieces, chopped

  • 6 large apples

  • 3 tablespoons unsalted butter, cut into 6 equal pieces

  • 1/2 cup apple cider

  • 2 tablespoons maple syrup

Directions

  1. Preheat the oven to 400 degrees F. Place the sliced almonds in a small saute pan over medium heat and toss, moving constantly over the heat until lightly toasted, about 5 minutes, cool and chop. In a small bowl, mix together the brown sugar, dried fruit and nuts. Cut off the tops of the apples with a paring knife, to make a little lid like on a Jack-O-Lantern. Set the apple tops aside. Remove the cores of the apples without cutting through the bottom using a small melon baller or paring knife. If using a paring knife, cut a circle straight down. Use the tip of the knife to cut the core into pieces, angling across the cylinder to disconnect the pieces from the bottom and pull them out.

  2. Place the apples in a baking pan or casserole dish and stuff the cavities with the fruit and nut mixture. Place a piece of butter on top of the mixture.

  3. Mix the apple cider and maple syrup together, pour into the bottom of the baking pan and bake the apples, uncovered, basting every 10 minutes, until they are tender when pierced with a paring knife, 30 to 40 minutes. Carefully place the reserved apple tops on the apples at 20 minutes.

  4. When the apples are tender, transfer them to a serving platter and cover with foil to keep warm. Pour the pan juices into a small saucepan and bring to a boil over high heat. Simmer the mixture until it becomes syrupy and reduces to a sauce, about 10 minutes. Serve over the apples.

Apple Maple French Toast Bake

Perfect for a cozy fall brunch, this fresh toast bake calls for just 10 ingredients and a few simple steps to create a sweet and gooey dish that pairs well with salty bacon and scrambled eggs.

Ingredients

  • 1 1/2 cups milk

  • 5 eggs, beaten

  • 1 teaspoon cinnamon, divided

  • 1/4 teaspoon ground ginger

  • 1/4 cup brown sugar

  • 5 to 6 cups cubed whole grain bread

  • 2 tablespoons butter

  • 4 apples, peeled, cored and sliced

  • 1/4 to 1/2 inch thick

  • 1/4 cup maple syrup

Directions

  1. Heat the oven to 375°F. Oil or butter an 8 x 8 inch baking dish.

  2. In a large mixing bowl, whisk together the milk, eggs, 1/2 teaspoon cinnamon, ginger and brown sugar. Add the bread and toss well. Set aside while you cook the apples, stirring once or twice to ensure the liquid soaks into the bread. Heat the butter in a skillet over medium heat. Add the apples and saute for 5 to 7 minutes until they begin to soften. Sprinkle with remaining cinnamon and stir in maple syrup. Cook another few minutes, allowing the maple syrup to caramelize and coat the apples. Remove from the heat and allow to cool.

  3. Gently stir the apples into the bread mixture and pour into the prepared baking dish. Bake for about 45 minutes until firm throughout. Serve warm with additional maple syrup if desired.

Honey-Bourbon Glazed Ham Steaks

Whether you’re making weekend brunch or just an easy Easter dinner for two, these glazed ham steaks are sweet and savory and easy to whip up in 15 minutes.

Ingredients

  • 3 tablespoons bourbon

  • 1/4 cup honey

  • 1 teaspoon ground ginger

  • 1/8 teaspoon ground cloves

  • 1 teaspoon vegetable oil or butter

  • 4 4-ounce ham steaks

Directions

  1. Combine the bourbon, honey, ginger and cloves in a cup and stir to mix. 

  2. Place a large skillet over medium-high heat. When hot, add oil or butter and tilt the pan to coat. Place the ham steaks in the hot pan and sear on both sides for about 1 minute per side. When the ham is browned and heated through, take the pan off the heat, move the ham to a plate and cover loosely with a pan lid or foil to keep warm. 

  3. Put the pan back on the burner over medium heat and add the honey mixture, stirring as soon as it hits the hot pan. It will boil and thicken quickly, within 30 seconds or so. Put the ham steaks back in the pan and turn frequently until they are glazed and coated. 

  4. Serve immediately and drizzle with any sauce left in the pan.

Maple Cranberry Chicken

Serve this chicken as an alternative to turkey this Thanksgiving, or make it after the holiday to use up any leftover cranberries!

Ingredients

  • 4 6-oz. chicken breast halves, boneless and without skin

  • 1 teaspoon dried thyme

  • 1/4 teaspoon coarse salt

  • 1/2 teaspoon coarsely ground black pepper

  • 1 tablespoon extra virgin olive oil

  • 2 cups cranberries, fresh or frozen

  • 1/4 cup maple syrup

  • 1/2 teaspoon dried rosemary

  • 1/2 teaspoon salt

Directions

  1. Pat the chicken breasts dry and sprinkle with thyme, coarse salt and pepper. Place a large saute pan over medium-high heat and drizzle with the olive oil. Place the chicken breasts in the pan and sear for about 2 minutes, then flip the chicken and reduce the heat to medium low. Cover the pan to cook the chicken all the way through, about 4 to 5 minutes, depending on the thickness of the breasts.

  2. While the chicken cooks, combine the cranberries, maple syrup, rosemary and salt in a small saucepan and place over high heat. When the berries start to pop and boil, reduce to medium-low heat and stir frequently until all the berries are popped and the sauce is thick, about 5 minutes. Remove from heat and keep warm.

  3. Serve each chicken breast with some of the sauce over the top.

Maple Sesame Kale Chips

A little salty, a little sweet, and a little spicy, this kale chip recipe is a great way to use up any kale you have on the brink of wilting in the back of the fridge.
