Featuring a subtle berry flavor and a kaleidoscopic orange flesh, blood oranges not only tantalize the taste buds but also make quite a visual statement on a plate. Here are some of our favorite sweet (and savory) ways to enjoy this sensational citrus when it’s in season.
Chocolate Blood Orange Parfaits
These chocolate blood orange parfaits feature homemade flourless chocolate cookies and sweetened Greek yogurt, and are totally worth the TLC. If you want a shortcut though, skip the homemade cookies and toss in your favorite store-bought version instead.
Ingredients
Gluten Free Flourless Chocolate Cookies
1/2 teaspoon blood orange zest
3/4 cup cocoa
1/2 cups powdered sugar
1/8 teaspoon salt
4 large egg whites
2 teaspoons vanilla
1 cup walnuts, coarsely chopped
Parfaits
6 cups nonfat Greek yogurt
1 1/2 cups powdered sugar
2 teaspoons vanilla
2 blood oranges
Mint sprigs, for garnish
Directions
Line a sheet pan with parchment paper. Heat oven to 350°F. Zest one orange into a small bowl, reserve. In a large bowl or stand mixer, whisk cocoa, sugar, and salt. In a glass measuring cup, combine egg whites and vanilla, then slowly beat into dry ingredients on low speed. Beat at medium speed for 2 minutes, until glossy. Mix walnuts and zest into batter. Drop scant quarter-cup mounds 3 inches apart on the prepared pan, and use a spoon to spread the batter out to half-inch thick cookies.
Put sheet pan on the middle oven rack and reduce heat to 325°F. Bake cookies until thin cracks appear, about 15 to 17 minutes. Allow to cool completely before removing from the pan, peeling off the parchment paper if necessary.
Place yogurt in a medium bowl and stir in powdered sugar and vanilla; reserve. Cut an orange in half and squeeze juice from one half into a small cup. Use a knife to slice the rind and pith away from the remaining orange and half-orange, and then use a paring knife to remove segments from the white membranes. Cut segments in half crosswise.
To assemble, use eight wine glasses or glass ramekins. Break each cookie into 4 pieces. Place one-third cup of yogurt mixture in each glass or ramekin, then add 2 pieces of cookie. Top with another one- third cup yogurt, add 4 orange pieces and 2 more cookie pieces, then drizzle blood orange juice around the edge of glass. Repeat process.
Refrigerate for at least 2 hours, and garnish with mint before serving.
Miso Blood Orange Scallops
Citrus and seafood go hand in hand. Pairing an extra-special citrus with an extra-special seafood dish just makes sense.
Ingredients
1 teaspoon blood orange zest
6 tablespoons blood orange juice (one large blood orange)
3 tablespoons white miso
2 tablespoons mirin (Japanese white cooking wine), or apple juice
12 ounces sea scallops, trimmed
1/2 teaspoon paprika
1 tablespoon olive oil
1 tablespoon unsalted butter
2 large scallions, whites minced, green tops sliced at an angle, separated
1/4 cup walnut pieces, toasted and chopped
Directions
In a cup, whisk the zest, juice, miso, and mirin and reserve. Pat the scallops dry with paper towels and sprinkle the tops with half of the paprika. Have a plate ready to hold the cooked scallops.
Place a large cast iron or stainless steel skillet over medium high heat and heat for about one minute, until hot. Add the olive oil and butter and swirl to coat the pan. Place the scallops in the pan paprika side down and sear 2 to 3 at a time, undisturbed, until the bottom edges look browned and are starting to crack. Sprinkle the un-seared tops of the scallops with remaining paprika, turn and cook for 2 to 3 minutes, until firm when pressed with a fingertip. Transfer to a plate and cover loosely with a pot lid to keep warm.
Reduce heat to medium and add the white parts of the scallions, stirring for a minute. Stir in the miso-orange sauce and bring to a boil for 1 to 2 minutes, until the sauce is slightly thickened.
To serve, place scallops on a plate, drizzle with sauce and top with toasted walnuts and scallion greens.
Kale & Blood Orange Salad
Blood oranges are the star of this simple salad that calls for less than 10 ingredients! If you want to up the citrus flavor, try subbing in a citrus vinaigrette for the olive oil in this recipe.
Ingredients
4 medium blood oranges
Juice of 1 large lemon
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 clove garlic, smashed
1/4 cup olive oil
1 bunch kale, washed, stems removed
1/2 cup slivered red onions
8 ounces feta cheese, crumbled or cubed
Directions
For the dressing, zest and juice one of the blood oranges into a small bowl or jar. Taste the juice. If it is very sweet, add a tablespoon of lemon juice; if it is very tart, use two tablespoons blood orange juice and 1 tablespoons of lemon juice. Add salt, pepper, garlic and olive oil and whisk well or shake to combine. Set aside.
Roll the kale leaves up, cut crosswise into thin ribbons and place into a serving bowl. Pour the dressing over the kale and use your hands to toss, then massage for a minute or two to tenderize the leaves.
Peel and segment the remaining blood oranges, either with your fingers or with a knife, cutting between the membranes to make neat sections. Cut each segment into 2 or 3 pieces and add to the bowl with the kale. Add the red onions and feta, toss to mix and serve.
