Mango Avocado Pasta Salad

If there's one thing to know about mangos, it's that they add a bright, tropical flavor to whatever dish you put them in.

Serve this fruity, tropical pasta salad with grilled chicken or spicy tofu.

Ingredients

  • 1/4 cup olive oil

  • 1/4 cup fresh lime juice

  • 2 tablespoons honey

  • 1/2 teaspoon salt

  • 1 large mango, peeled, pitted and chopped

  • 1 large avocado, cubed

  • 1/4 cup sliced red onion

  • 8 ounces whole-wheat spiral pasta

  • 1/2 cup fresh basil, slivered

  • 1/2 cup roasted cashews, coarsely chopped

Directions

  1. Put on a pot of water for cooking the pasta, and add a large pinch of salt.

  2. In a large bowl, combine the olive oil, lime juice, honey and salt. Whisk to mix.

  3. Add the mango, avocado and red onions. Cook the pasta according to package directions, about 10 minutes, then rinse and drain.

  4. Add the pasta to the bowl; toss to coat and mix well. Mix in the basil and top with cashews.

mango jicama guacamole

Mango Jicama Guacamole

Sweet mango and crunchy jicama add a nice twist to a fairly traditional guacamole in this recipe from Co+op.

Spread it on tacos, use it as a chip dip, or toss it in with a salad.

Ingredients

  • 1/2 cup chopped mango

  • 1/2 cup cubed jicama

  • 1 tablespoon plus 1 teaspoon fresh lime juice

  • 2 large ripe avocados

  • 1/2 teaspoon salt

  • 1 clove garlic, smashed

  • 2 small scallions, chopped

  • 1 pinch chili powder

Directions

  1. Peel and chop the mango and jicama in small, even pieces; sprinkle with a teaspoon of lime juice and reserve.

  2. Halve the avocados and remove the pits; scoop the flesh into a medium bowl. Mash coarsely with a fork, then add the remaining tablespoon of lime juice, salt and garlic and mix. Stir in the scallions.

  3. Spread the guacamole in a small serving bowl. Sprinkle mango and jicama on top of the guacamole, then dust with chili powder. Serve immediately with chips or quesadillas.

Coconut Mango Muffins

Here's a tropical take on muffins that incorporates both mango and coconut into the mix.

Sub in almond flour for a sweet, healthier paleo alternative to traditional flour.

Ingredients

  • 1 cup all-purpose flour

  • 1 cup whole wheat pastry flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon ground allspice

  • 1/2 teaspoon ground cloves

  • 1/2 cup light brown sugar

  • 2 large eggs, lightly whisked

  • 1/4 cup melted virgin coconut oil

  • 3/4 cup coconut milk

  • 1 tablespoon fresh lime juice

  • 2 teaspoons fresh lime zest

  • 1 cup finely chopped mango

  • 3 tablespoons shredded coconut

  • 3 tablespoons turbinado sugar (optional)

Directions

  1. Preheat the oven to 350°F. Line a 12-cup muffin tin with paper liners. In a large bowl, combine the flours, baking powder, salt, cinnamon, allspice, cloves, and brown sugar and whisk to combine. Reserve.

  2. In a medium bowl, lightly whisk the egg, then whisk in the coconut oil, coconut milk, lime juice, and zest. Stir the coconut milk mixture into the flour mixture, just until moistened, then stir in the mango.

  3. Fill muffin cups 3/4 full, then sprinkle the tops with coconut and, if desired, turbinado sugar. Bake for 15–20 minutes, until a toothpick inserted in the center of a muffin comes out with no wet batter clinging to it. Cool muffins in the pan on a wire rack for 10 minutes before tapping the pan to remove them and letting them finish cooling on the rack.
