20 Berry Delicious Blueberry Recipes

Blueberries are always delicious, but especially when they're fresh, in-season, and grown right here in the Pacific Northwest. And those special berries are finally here.

As with any fresh, in-season fruit, we recommend simply enjoying it as-is. But, that doesn't mean you can't have fun in the kitchen and experiment with some berry delicious recipes!

Blueberry Recipes: Breakfast

There's something about blueberries that makes them unbelievably breakfast-worthy. Maybe it's because they have the perfect amount of sweetness to get you perked up for the day, or maybe it's because they play so well with other breakfast foods. Either way, bluebs are worth eating first thing, so we've put together some of our favorite breakfast recipes featuring blueberries.

Sour Cream Coffee Cake with Blueberries

Sweet, juicy blueberries and tart sour cream balance each other out perfectly in this coffee cake recipe.

Though we highly recommend using fresh blueberries for this recipe, if you have a stash taking up space in the freezer, feel free to use those instead.

Ingredients

  • 1 cup butter, softened

  • 2 cups white sugar

  • 2 eggs

  • 1 cup sour cream

  • 1 teaspoon vanilla extract

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 cup frozen blueberries

  • 1/2 cup brown sugar

  • 1/2 cup chopped pecans

  • 1 teaspoon cinnamon

  • Powdered sugar, for dusting (optional)

Directions

  1. Preheat the oven to 350°F. Grease and lightly flour a 9-inch bundt pan.

  2. In a large bowl, cream together the butter and sugar. Beat in eggs, one at a time, and stir in sour cream and vanilla.

  3. Combine flour and baking powder and stir into the batter. Gently fold in the blueberries.

  4. In a small bowl, combine pecans, brown sugar, and cinnamon.

  5. Fill the bundt pan with half the batter, sprinkle in half the pecan mix, then pour in the remaining batter and top with remaining pecan mix. Use a knife or fork to swirl the pecan mix into the cake batter.

  6. Bake 60 minutes, or until a knife blade inserted in the cake comes out clean. Cool in the pan on a wire rack and dust with powdered sugar before serving.

A little sweet and a little savory, this waffle recipe from Bob's Red Mill incorporates their paleo pancake and waffle mix, but feel free to sub in a traditional mix if you prefer that.

Heat your oven to 200 degrees Fahrenheit prior to making your pancakes, especially if you're making a big batch. Once they're cooked, transfer your pancakes to the pre-heated oven to keep them warm until they're ready to serve.

Blueberry Peach Bread Pudding with White Chocolate Sauce

When it's done correctly, bread pudding is perfectly creamy and has a soft, spongy texture that melts in your mouth.

Here, blueberries and peaches are used for an extra sweet element that's the best when the fruits are in season. And the white chocolate sauce is the figurative cherry on top!

Ingredients

  • 1 loaf challah bread (about 1 1/4 pounds), cut into 1/2-inch thick slices

  • 2 tablespoons butter

  • 1 cup sliced fresh or frozen peaches (about 2 peaches)

  • 1 cup fresh or frozen blueberries

  • 3 large eggs

  • 4 cups milk

  • 2 cups sugar

  • 2 tablespoons vanilla extract

  • 1 teaspoon cinnamon

  • 8 ounces white chocolate, finely chopped

  • 5 tablespoons butter, in pieces

  • 1/3 cup heavy cream

Directions

  1. Preheat the oven to 375°F. Butter a 9 x 13-inch baking dish with 2 tablespoons of butter. Layer slices of bread in the dish along with sliced peaches and blueberries. In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla, and cinnamon. Carefully pour this mixture over the top of the bread and fruit. Let stand for one hour, pressing down on the bread occasionally to help it absorb the liquid. Bake for 1 hour until the top begins to brown lightly and the liquid is mostly absorbed. Let pudding stand 15 minutes while you make the sauce.

  2. Place chopped white chocolate, butter, and heavy cream in the top of a double boiler, over low heat. Melt chocolate, stirring frequently. Remove from heat and whisk to make a smooth sauce. Drizzle over slices of bread pudding and serve warm.

Blueberry Recipes: Savory Dishes

Though you might not think of dishes like roasted chicken and BBQ ribs when you think of blueberries, utilizing fresh berries in savory dishes is absolutely delicious!

Generally, the blueberries are cooked down and used as a glaze or sauce for savory dishes. Here are some of our favorites.

Grilled Salmon with Blueberry Salsa

Salmon takes on sweet flavors incredibly well, especially when you use a squeeze of fresh citrus and a slice of butter.

Here, blueberries are made into salsa and added on top of salmon. Serve this meal with roasted potatoes and a local salad.

Ingredients

  • 4 4-ounce salmon fillets

  • 1/2 teaspoon chipotle pepper powder

  • 1 tablespoon olive oil

  • Pinch of salt

  • 1 cup fresh blueberries

  • 1 large jalapeño pepper, finely chopped

  • 2 tablespoons finely chopped red onion

  • 1/4 cup chopped cilantro

  • 1 tablespoon lime juice

  • 1/4 teaspoon salt

Directions

  1. Heat the grill. Place the salmon skin-side down on a plate and rub with olive oil, sprinkle with chipotle pepper and salt; let stand.

  2. In a medium bowl, combine the blueberries, jalapeño, red onion, cilantro, lime juice and salt. Stir vigorously, coarsely mashing some of the blueberries to release the juice.

  3. When the grill is hot, use tongs to swab the grate with a paper towel dipped in vegetable oil. Place the salmon on the hot grill, skin-side up. Let the salmon cook until it has grill marks and the edges look browned, about 3 minutes. Carefully lift each fillet and turn over. Close the lid of the grill and cook about 4 minutes more for thin, wild-caught fillets, longer for farm-raised salmon. When the fish is just cooked through, transfer to a clean platter. Top each fillet with about a quarter cup of salsa, and serve hot.
