Of course, what's a list of avocado recipes without guac?

Here's a standard guacamole recipe that you can adapt with your favorite additions like mango or extra spice.

Ingredients

  • 3 Haas avocados, ripe

  • 1/4 cup diced fresh tomato (seeded)

  • 2 tablespoons diced red onion

  • 1 teaspoon chopped garlic (one clove)

  • 1 tablespoon fresh-squeezed lime juice (half a lime)

  • 1 teaspoon ground cumin

  • 1 teaspoon chipotle chili powder

  • 1 teaspoon fresh cilantro, minced (optional)

Directions

  1. Slice the avocadoes lengthwise, remove the pits and scoop the green flesh (discard any brown flesh) into a bowl.

  2. Use a fork to mash the avocado pulp to a chunky texture. Add the lime juice, garlic, onion, and spices and mix well. Add the tomatoes and cilantro, mix and serve.

Eggs Baked in Avocado with Bacon

Given that avocados are full of healthy fat and do a good job of filling you up, it's no wonder that they're perfect for breakfast!

Here, eggs are baked inside avocados and topped with bacon for a simple breakfast that's delicious.

Ingredients

  • 1 slice bacon, cooked and crumbled

  • 2 large avocados

  • 4 large eggs

  • Salt and pepper

  • aluminum foil for the pan

Directions

  1. Preheat the oven to 400 F. Cook the bacon and reserve. In a loaf pan or a small casserole pan, use crumpled foil to create a stable base for the avocado halves. Slice the avocado and remove the pit, then spoon out about 2 tablespoons of the avocado flesh where the pit was to make the hollow large enough for the egg. Then skim a thin layer off the surface up to the rim formed by the skin.

  2. Set the avocado halves in the pan on the aluminum foil, scrunching the foil to hold them level. Crack each egg and carefully slip into the avocado half. Sprinkle with salt and pepper, then bake for 25-30 minutes, until the whites are completely cooked and the yolk is at the desired level of firmness.

  3. Transfer to serving plates and sprinkle with crumbled bacon. Serve immediately.

Spicy Avocado Egg Salad

Here's a unique twist on classic egg salad that incorporates avocados and chipotle powder for a kick of spice.

Ingredients

  • 6 large eggs

  • 1 large avocado, divided

  • 2 tablespoons fresh lime juice

  • 1/2 teaspoon salt

  • 1/2 teaspoon chipotle powder

  • 2 medium scallions, chopped

  • 1 rib celery, chopped

  • 1 large jalapeño, chopped

  • 1/4 cup fresh cilantro, coarsely chopped

Directions

  1. Place the eggs in a medium pot, and add cold water to cover them by an inch. Place over high heat and bring to a boil. As soon as the water comes to a full rolling boil, remove from the heat, cover and let stand for 14 minutes.

  2. Drain the eggs, rinse with cold water, then place the cooked eggs in the refrigerator to chill completely. When cold, peel, rinse and chop the eggs. Place in a medium bowl.

  3. Halve the avocado and remove the pit, then scoop half of the flesh into a large bowl. Mash thoroughly, then stir in the lime, salt and chipotle powder.

  4. Add the scallions, celery, jalapeño, cilantro and chopped egg, and stir. Using the tip of a paring knife, cut the remaining avocado half into cubes in the shell, then use a spoon to scoop the cubes out into the salad. Fold into the egg salad, and serve.

kiwi avocado smoothie

Kiwi-Avocado Smoothie

With their smooth texture, avocados are an excellent smoothie mix-in.

Here, avocado is paired with kiwis, spinach, and coconut water to create a simple green smoothie.

Ingredients

  • 5 medium kiwis, peeled

  • 1/2 medium avocado

  • 1 cup baby spinach

  • 1 cup plain coconut water or kombucha

  • 2 tablespoons honey

Directions

  1. Combine the ingredients in the blender and process. Serve immediately.

avocado hummus chicken sliders

Avocado Hummus Chicken Sliders

If you wanted to take this recipe to the next level, you could swap out store-bought hummus for your favorite homemade recipe.

Ingredients

  • 4 small boneless skinless chicken breast halves

  • 1/2 teaspoon coarse salt

  • 1/2 teaspoon freshly ground black pepper

  • 1 teaspoon dried thyme

  • 1/2 cup prepared hummus

  • 1/2 large avocado

  • 1 tablespoon capers, drained

  • 2 large Kalamata olives, chopped

  • 8 whole wheat slider buns or whole wheat dinner rolls

  • 16 spinach leaves

Directions

  1. Heat oven to 400°F. Lightly oil a sheet pan.

  2. Cut each chicken breast portion in half to make two even, slider-sized portions and place the chicken on the pan. Sprinkle with salt, pepper and thyme. Roast for 20 minutes, until an instant read thermometer inserted in the thickest part of a breast reads 165°F and the juices run clear. Cool the chicken on a rack until cool enough to handle.

  3. Halve the avocado, remove the pit, and cut the flesh, still inside the skin, into dice and scoop into a medium bowl Add hummus, capers and olives and stir.

  4. On each bun, place a couple of spinach leaves, a piece of chicken, and top with about 3 tablespoons of the hummus mixture. Cover with the top half of the bun, using a toothpick to hold it together, if desired. Place sliders on a platter and serve.

Avocado Chimichurri Sauce

In this recipe, diced avocado is added to chimichurri sauce for and added texture that's perfect for bruschetta.

Ingredients

  • 2 large ripe avocados, pitted and diced

  • 1 lime, juiced

  • 1 tablespoon olive oil

  • 1/2 small red onion, diced

  • 1/4 red bell pepper, diced

  • 3 jalapeno peppers, minced

  • 1 tomato, seeded and diced

  • 1 tablespoon fresh cilantro, chopped

  • 2 cloves fresh garlic, minced

  • Salt and pepper to taste

Directions

  1. In a medium bowl, toss the diced avocado with the lime juice and olive oil.

  2. Stir in the remaining ingredients.

  3. Season with salt and pepper to taste.

Kiwi Chicken Salad

Here's a chicken salad with a tropical twist. Chicken is combined with scallions, kiwi, orange, and avocado for a bright salad that's a simple midday lunch.

Ingredients

  • 1 pound cooked chicken breast, chopped

  • 1/2 cup full-fat Greek yogurt

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 large scallions, chopped

  • 2 kiwi fruit, peeled and chopped

  • 1 large orange, peeled and chopped

  • 1 avocado, diced

  • 1/4 cup slivered almonds, toasted

Directions

  1. Place the chopped chicken in a large bowl. In a cup, stir the yogurt, olive oil, lemon juice, salt and pepper, and pour over the chicken.

  2. Add the scallions, kiwi, orange and avocado and toss to mix. Mix in almonds just before serving.
