30 Ooey-Gooey Cheese Recipes

Cheese. It's salty, gooey, flavorful, and might be one of the most commonly used ingredients in the kitchen. And nowadays, even if you're vegan, lactose intolerant, or allergic to cheese, there are so many different plant-based options that everyone can enjoy!

So while a good old-fashioned grilled cheese is a wonderful way to enjoy your favorite cheese, we think there are some other recipes that you should try out too!

Traditional Dairy Cheese Recipes

If you've ever had the chance to visit our "cheese island," you know just how many different brands we carry, many of which are made from cow's milk. Savory Herb Cheese Bites

What's a better way to enjoy cheese than rolling it up into a ball with herbs and eating it in just a few bites?

These cheese balls are easy to customize and adapt to whatever you've got in the fridge. But if you want to use it as an excuse to buy more cheese, we don't blame you.

Ingredients

  • 4 ounces cream cheese, softened

  • 1 tsp. minced garlic

  • Pinch of salt

  • 4 oz. Gruyere cheese, shredded

  • 2 tsp. minced fresh sage

  • 1 tsp. minced fresh rosemary

  • 1/4 cup finely chopped walnuts

  • 1 tbsp. minced parsley

  1. In a food processor, blend the cream cheese, garlic, and salt until smooth. Transfer cream cheese mixture to a bowl and stir in the Gruyere cheese, sage and rosemary until evenly distributed. Line a plate or pan with parchment paper.

  2. Roll the cheese mixture into 1-inch balls and set on the parchment paper. In a small bowl, combine the walnuts and parsley and stir until well mixed. Roll each ball in the mixture and return to plate or pan. Place the cheese balls in the refrigerator to firm. Serve with crackers or crostini.

Softer and tangier than regular cheese, goat cheese is perfect for spreading or rough chopping into chunks for salads. Here are a few of our favorite goat cheese recipes.

Grilled Goat Cheese Crostini with Roasted Peppers

Since goat cheese is so soft and easy to spread, it's perfect for crostini!

The addition of sweet roasted peppers balances out the tangy goat cheese while crunchy baguette slices offer a complementary texture to the soft toppings.

Ingredients

  • 3 medium bell peppers, any color

  • 1 small baguette

  • 3 tbsp. balsamic vinegar

  • 2 tbsp. olive oil

  • 1 tbsp. chopped fresh oregano

  • 1/2 tsp. salt

  • Freshly ground black pepper

  • 8oz. fresh goat cheese

  • 1/4 cup nonfat Greek yogurt

  • 1 clove garlic, pressed

  • 1/2 cup fresh basil, chopped

  • Olive oil, for brushing

Directions

  1. Heat the grill to medium-high. Grill the bell peppers, turning occasionally, until the skin is charred, 15 to 20 minutes. Put the peppers in a heatproof bowl or storage container, cover tightly, and let sit until cool enough to handle about 30 minutes. When cooled, scrape the skins from the peppers, then remove the stems and seeds, scraping with the back of a paring knife to clean the flesh. Cut peppers in slivers and reserve. The pepper mixture can be prepared up to 3 days ahead of time and refrigerated.

  2. Cut the baguette into 12 slices. Brush the slices with olive oil, then place on the grill for just a minute or so on each side, until crisp. Transfer to a large platter. In a large bowl, whisk the balsamic vinegar, olive oil, oregano, salt and pepper to taste. Add the peppers. Toss to coat.

  3. In a small bowl, mash the goat cheese with the yogurt and garlic until smooth, and stir in the basil. To serve, spread about 2 tablespoons of cheese on each slice of bread, then top with peppers. Serve immediately.
