New Gluten Free &Vegan Deli Options

Our Deli makes a variety of delicious foods each day from scratch. Look for expanded vegan and gluten free options,in the bakery,cold case as well as the hot bar.

Our darling cooks Tamsin and Gretchen

Co-op cooks Gretchen and Tamsin are busy in the kitchen,working with new vegan and gluten free recipes. “Vegan food can get a bad rap. Our job at the Co-op is to give people options and new things to try,”says Tamsin. “The first dish I ever made on my own was stuffed squash,so it has a tender place in my heart. Everyone knows what a zucchini is,so it’s a safe and tasty bet for most folks.”

Chickpea Curry on the Hot Bar

Look for more vegan and gluten free offerings on the hot bar coming soon,including:Lentil and Quinoa Pilaf,Curried Stuffed Squash and Tofu with Ginger Cashew Sauce and Basmati Rice. “I think it’s important to broaden our diets. We don’t need to eat meat and cheese everyday,”adds Lead Cook Gretchen. She notes the importance of appealing to a variety of folks:“We try to eat as gluten free as possible at home and I have a 5 year old son. When I cook something I ask myself ‘would he eat this?’And that’s how I know it’s good.”

Yummy Roasted Eggplant Bruschetta

Some of the Co-op’s vegan,gluten free recipes are seasonal,such as the Roasted Eggplant Bruschetta Salad. Charred eggplant and garlic united with cherry tomatoes and cilantro to create a dish bursting with fresh summer flavors. It is the most delicious eggplant dish I’ve had in years and pairs nicely with grilled meats and BBQ.

Some other notable vegan and gluten free options:

Chickpea Curry –this delicately spiced curry is a healthy comfort food,complete with tomatoes and creamy coconut milk. Meat-eaters won’t miss the meat! This dish is substantial and satisfying in its blend of fluffy Basmati rice,exotic spices and nutritious garbanzo beans (chickpeas).

Pesto Quinoa Stuffed Squash –so popular it’s almost gone!

Pesto Quinoa stuffed Zucchini –an elegant way to use whole squash,these zucchinis are hand-hulled and stuffed with pureed zucchini,spices and whole grain quinoa. The bright flavor of fresh basil and garlic compliments the chewy texture of the quinoa and the succulent flesh of the squash. A meal in itself or a great accompaniment to main dishes.

Vegan Chocolate Mousse –one of the few treats that are both vegan and gluten free! Indulge in a cup of rich fluffy mousse,made with semi-sweet Ghiradelli chocolate. Add some freshly picked organic fruit and you’ve got a dessert or breakfast to remember.

Vegan oatmeal cookies from heaven!

Oatmeal Sandwich Creme Cookies –these melt in your mouth treats are available in the Deli’s cold case. These sweeties are made with a special vegan creme based on Tofutti cream cheese,powdered sugar and Earth Balance non-GMO soy spread. Treat yourself today,but beware –they’re addictive!
