The Cheese Whisperer:Western Sage Cheddar

Cheddar comes in all shapes, sizes and flavors. One of its many forms is Western Sage Cheddar –a recent arrival to the Co-op’s Cheese Island from Bravo Farms in Traver,California. It is based on Sage Derby,a traditional British white cheddar infused with savory,citrus-y sage. Western Sage Cheddar is made in the traditional style:handmade washed curds are combined with dried sage leaves, then pressed into circular molds to form wheels and blocks of cheese.

Sage may be familiar to many food lovers. This strong-tasting culinary herb lends a minty, refreshing and almost medicinally green-flavor to many dishes and cheeses. Adding sage to Bravo Farms’smooth cheddar has an interesting effect:it develops complex, earthy flavors that shine especially when heated or eaten at room temperature.

Traditional Sage Derby is known as a holiday cheese in England. It was first made in 17th century England. Now available year-round,sage cheddars are often enjoyed melted on toast or paired with fresh apples and ale.

Discover Western Sage Cheddar for yourself –it’s made with vegetarian rennet and fresh, whole raw milk (hormone and antibiotic free) from Bravo Farms’herd of happy cows. The joy of this “green”cheddar can be yours if you follow your heart to Cheese Island.
