Well this weekend is Memorial Day and I am off to a picnic. The weather is not supposed to hold up,meaning typical Washington Grey with a chance of ….wait for it…..rain. But I am not letting that stop me from frolicking (yes I have been known to frolic…) with friends. Not being one to rest on my food laurels,I have been combing my recipe box for just the right dish to bring.
Bean Salad? – Gasp NO!!
Potato Salad? EEEKS the horror (see previous Potato Salad post)
Dip of some gloppy description? CURSES!!
Vegan Brownies made with avocado?
HOLY CHOCOLATE LOVE SQUARE!!!
Ingredients
- 1 avocado,pitted
- 3/4 cup cocoa powder
- 2 cups all-purpose flour
- 1.5 teaspoons baking powder
- 1 cup raw sugar
- 1/3 cup maple syrup
- 1.5 teaspoons vanilla extract
- 1.5 cups water
- 3/4 cups chocolate chips (non dairy if you want to keep it vegan)
Directions
Preheat oven to 350º F.
Get avocado good and smashed
Combine avocado with wet ingredients (syrup,vanilla extract,water).
Sift together dry ingredients (cocoa powder,flour,sugar,baking powder.)
Add dry to wet in several batches,mixing after each addition. Stir in chocolate chips,and then pour batter into greased 9×9 baking dish.
Bake for ~ 35-45 minutes (insert a toothpick/skewer in the middle to test doneness).
Remove from oven and place on baking rack. Let cool for at the very least 20 minutes – they need to firm up.
