Does anyone ever plan for avocados?? I have never thought…ok NEXT WEEK I will make blah blah so I better go buy avocados now so they will be ripe !!  For me avocados are an immediate purchase,for the meal I am having today or tomorrow.  I will even admit to running out real quick to grab one.  Don’t get me wrong I super love them,I have made pudding with them,shakes,pies,put them on everything.  The trouble comes in the form of needing to use the “extra” ones before they go bad.  I have found that avocados make a delightful dressing.

Creamy Avocado Dressing

 

Ingredients
  • 1 medium avocado
  • 1 small jalapeno*
  • 1/4 cup cilantro
  • 1 lime,juice
  • 1 green onion
  • 1 clove garlic
  • 3/4 cup buttermilk**
  • 1/2 tsp cumin seeds,toasted and ground
  • salt and pepper to taste
Directions
  1. Puree everything in a blender until smooth. Store in fridge and finish within a few days.

* Leave the seeds in for more heat or remove them for less.
** Use more buttermilk to make it thinner or less to make it thicker.
