This “micro citrus”is a native Australian bush fruit now being cultivated in Australia and California. Sometimes called citrus pearls or citrus caviar,the tiny fruits consist of juice-filled “vesicles”with a flavor akin to a very mild lime. Some suggested uses include serving over oysters with a splash of champagne (what a treat for your Valentine!),a garnish for sushi,peppered over cut melon,tossed with fresh Ceviche,or sprinkled over cheesecake. We have found that the dark-skinned variety contains pink pearls,while the green-skin contains green pearls. Don’t let the price dissuade your exploration of this cool little fruit –even at $59.99 per lb,they come out to about 30-40¢ each.
